Ingredients

Scale

Dry Ingredients

  • 1 ½ cups whole wheat flour
  • 1 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 2 ¼ teaspoons active dry yeast (1 packet)

Wet Ingredients

  • ¾ cup warm milk (around 110°F / 43°C)
  • ½ cup warm water (around 110°F / 43°C)
  • 3 tablespoons honey (divided)
  • 3 tablespoons unsalted butter, melted
  • 1 large egg

Instructions

  1. Activate the Yeast: Combine warm water, 1 teaspoon honey, and active dry yeast in a small bowl. Let sit for 5 to 10 minutes until the mixture becomes frothy, indicating the yeast is active.
  2. Mix the Dough: In a large mixing bowl, whisk together whole wheat flour, all-purpose flour, and salt. Add the yeast mixture, warm milk, melted butter, remaining 2 tablespoons honey, and egg. Stir until a sticky dough forms.
  3. Knead the Dough: Transfer the dough onto a lightly floured surface. Knead for 8 to 10 minutes until smooth and elastic, which helps develop gluten for the perfect texture.
  4. First Rise: Place the dough in a lightly greased bowl and cover with a towel or plastic wrap. Let it rise in a warm, draft-free place for about 1 hour or until doubled in size.
  5. Shape the Rolls: Punch down the risen dough to release air. Divide into 12 equal portions and shape each into a smooth ball. Arrange them on a greased baking tray or loaf pan, leaving space between each roll.
  6. Second Rise: Cover the shaped rolls and let rise for 30 to 40 minutes until puffy and soft.
  7. Bake: Preheat the oven to 375°F (190°C). Bake the rolls for 15 to 18 minutes until golden brown on top. Optionally, brush warm rolls with melted butter immediately after baking for a shiny, soft crust.

Notes

  • Measure flour carefully using a kitchen scale to avoid dense dough.
  • Ensure milk and water are warm but not hot to properly activate yeast without killing it.
  • Knead dough thoroughly for the best gluten development and texture.
  • Proof dough in a warm, draft-free environment for optimal rise.
  • Brush rolls with butter immediately after baking to enhance flavor and softness.
  • Space dough balls adequately on baking tray to prevent them from sticking together during rising and baking.
