Korean Marinated Mayak Eggs

Korean Marinated Mayak Eggs

Korean Marinated Mayak Eggs are silky, savory eggs soaked in a flavorful soy-based marinade, offering a perfect balance of sweet, salty, and umami flavors with a luscious, creamy yolk texture. Ideal as a snack, ramen topping, or appetizer, these eggs are easy to prepare and deepen in flavor with time.

Ingredients

Scale

Eggs

  • 6 large fresh eggs

Marinade

  • 1/2 cup soy sauce
  • 2 tablespoons sugar or honey
  • 2 cloves garlic, minced
  • 2 green onions, thinly sliced
  • 1 teaspoon sesame oil
  • 1/4 cup water or broth
  • 1/2 teaspoon chili flakes (optional)

Instructions

  1. Perfectly Boil the Eggs: Carefully boil large eggs for exactly 6 to 7 minutes to achieve a slightly soft but set yolk. Immediately plunge the eggs into ice-cold water to stop further cooking and make peeling easier.
  2. Prepare the Marinade: In a bowl, combine soy sauce, minced garlic, sugar or honey, thinly sliced green onions, sesame oil, and water or broth. Mix well to create a balanced and flavorful marinade.
  3. Peel and Marinate: Gently peel the eggs, taking care not to break the whites. Place the peeled eggs in a ziplock bag or airtight container and pour the marinade over them, ensuring the eggs are fully submerged for even flavor absorption.
  4. Marinate for at Least 12 Hours: Refrigerate the eggs and marinade for at least 12 hours. For a deeper, more intense flavor, marinate up to 24 hours.
  5. Serve and Enjoy: Remove eggs from the marinade, slice them in halves or quarters, and serve cold or at room temperature. Enjoy as a snack, ramen topping, salad addition, or alongside rice bowls.

Notes

  • Use room temperature eggs to prevent cracking and ensure even cooking.
  • Do not overcook the eggs to maintain creamy, jammy yolks.
  • Marinate longer for deeper flavor up to 24 hours if possible.
  • Use a shallow container to allow eggs to soak evenly without excess marinade.
  • Add aromatics like ginger slices or star anise to customize flavor profiles.
  • Store marinated eggs submerged in the marinade in an airtight container in the refrigerator for up to 5 days.
  • Freezing is not recommended as it compromises texture and taste.
  • Best served cold or at room temperature; gently warm if desired without cooking further.
