  • 2 tbsp fresh lime juice
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Prepare the chicken: Pat the chicken dry with paper towels to ensure the skin crisps up nicely. If using a whole chicken, spatchcock it for even cooking or use bone-in, skin-on parts like thighs and drumsticks. Season lightly with salt and black pepper.
  2. Mix the mayo marinade: In a small bowl, combine mayonnaise, garlic powder, smoked paprika, cumin, lime juice, salt, and black pepper. Whisk until smooth and well blended to create a rich and flavorful coating.
  3. Coat the chicken: Generously rub the mayo mixture all over the chicken, making sure to get under the skin if possible for extra flavor infusion. Place the coated chicken on a baking sheet or roasting pan lined with parchment paper.
  4. Roast to perfection: Preheat your oven to 425°F (220°C). Roast the chicken for 35-45 minutes if using parts, or about 1 hour for a whole chicken, until the skin is golden and crispy and the internal temperature reaches 165°F (74°C). Baste occasionally for extra juiciness if desired.
