Instructions

  1. Prepare the Lemon Cream: Whisk together the egg yolks and sugar until pale and fluffy. Slowly add mascarpone cheese, fresh lemon zest, and lemon juice, mixing until smooth and creamy. In a separate bowl, whip the heavy cream to soft peaks, then gently fold it into the mascarpone mixture to create a light and airy filling.
  2. Create the Lemon Soaking Syrup: Combine fresh lemon juice, water, and sugar in a bowl, stirring until sugar dissolves. This tangy syrup will soak the ladyfingers, infusing bright citrus flavor without overpowering.
  3. Assemble the Layers: Quickly dip each ladyfinger into the lemon syrup, avoiding oversaturating. Arrange a single layer in the serving dish, then spread half of the lemon cream evenly on top. Repeat with a second soaked layer of ladyfingers followed by the remaining lemon cream, smoothing the surface.
  4. Chill and Set: Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours or overnight to allow flavors to meld and the texture to firm.
