Marry Me Gnocchi

Marry Me Gnocchi is an irresistibly creamy and comforting dish featuring pillowy potato gnocchi coated in a luscious sauce made with heavy cream, sun-dried tomatoes, garlic, and parmesan. Enhanced with fresh basil and a touch of red pepper flakes, this easy-to-make recipe delivers rich, savory flavors perfect for cozy meals or impressing guests with minimal effort.

Ingredients

Main Ingredients

  • Potato gnocchi – 1 pound (fresh or store-bought)
  • Heavy cream – 1 cup
  • Sun-dried tomatoes (chopped) – 1/3 cup
  • Parmesan cheese (grated) – 1/2 cup
  • Garlic (minced) – 3 cloves
  • Fresh basil (chopped) – 1/4 cup plus extra for garnish
  • Red pepper flakes – 1/4 teaspoon (or to taste)
  • Olive oil – 2 tablespoons
  • Salt – to taste
  • Freshly ground black pepper – to taste

Instructions

  1. Prepare the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions, usually 2-3 minutes or until they float to the surface. Drain and set aside.
  2. Sauté Garlic and Sun-Dried Tomatoes: In a large skillet, warm olive oil over medium heat. Add minced garlic and cook until fragrant, about 30 seconds. Toss in chopped sun-dried tomatoes and cook for another 1-2 minutes, allowing the flavors to meld.
  3. Create the Creamy Sauce: Pour in the heavy cream and stir well. Bring the mixture to a gentle simmer, then add grated parmesan cheese. Stir continuously until the cheese melts and the sauce thickens slightly.
  4. Combine Gnocchi and Sauce: Add the cooked gnocchi to the skillet and toss gently to coat every piece with the creamy sauce. Season with salt, freshly ground black pepper, and a pinch of red pepper flakes.
  5. Finish with Fresh Basil: Turn off the heat and fold in chopped fresh basil leaves, saving a few for garnish. The heat from the dish will release the basil’s aroma without cooking it down.

Notes

  • Use fresh gnocchi when possible for a lighter, fluffier texture.
  • Do not overcook gnocchi; cook just until they float to keep tender, not mushy.
  • Toast the garlic lightly and avoid burning to prevent bitterness.
  • Add parmesan cheese gradually to avoid clumping and ensure a smooth sauce.
  • Season the sauce as you cook, tasting to avoid under or over seasoning.
