Instructions

  1. Prepare the crust: Roll out pie dough on a lightly floured surface to about 1/8 inch thick. Use a round cookie cutter or glass slightly larger than your mini pie tins to cut circles. Gently press each circle into the tins, trim excess dough, and chill in the fridge to prevent shrinking during baking.
  2. Mix the filling: In a medium bowl, whisk together eggs, light corn syrup, brown sugar, melted butter, vanilla extract, and salt until smooth. Fold in the chopped pecans last to maintain their crunch.
