Ingredients

Scale

Main Ingredients

  • 2 pounds Russet or Yukon Gold potatoes, peeled and cut into chunks
  • 4 tablespoons butter
  • 1/2 cup warm milk or cream
  • Salt, to taste
  • Black pepper, to taste

Optional Add-Ins and Toppings

  • 1/4 cup shredded cheddar or Parmesan cheese
  • 2 tablespoons fresh herbs (rosemary, chives, parsley), chopped
  • 2 tablespoons crispy bacon bits
  • 1 tablespoon green onions, sliced
  • Roasted garlic, 1-2 cloves, mashed
  • Pinch of cayenne pepper or smoked paprika

Instructions

  1. Prepare and Boil the Potatoes: Peel and cut the potatoes into even chunks. Place them in a large pot of salted water and boil until fork-tender, about 15-20 minutes, ensuring a creamy, smooth mash.
  2. Mash the Potatoes: Drain the potatoes thoroughly and return them to the pot or a large bowl. Add butter and warm milk or cream, then mash with a potato masher or mixer until smooth and creamy. Season generously with salt and pepper to taste.
  3. Prepare the Muffin Tin: Lightly grease the muffin tin wells with butter or cooking spray to prevent sticking and enable easy removal after baking.
  4. Fill the Muffin Tin: Spoon the mashed potatoes evenly into each muffin cup, filling them just right to create uniform “potato cups.” Optionally, sprinkle cheese or herbs on top for extra flavor and color.
  5. Bake Until Golden: Place the muffin tin in a preheated oven at 375°F (190°C) and bake for about 15-20 minutes, until the tops turn golden brown and slightly crisp around the edges.
  6. Serve Warm or Store: Remove from the oven and let cool slightly before removing from the tin. Serve warm or cool completely to store for later use.

Notes

  • Use warm milk or cream to maintain the creamy texture without cooling the potatoes.
  • Do not overmix the potatoes to avoid a gluey texture; mash until just smooth.
  • Grease the muffin tin well for easy removal of potato cups.
  • Customize toppings with different cheeses or fresh herbs before baking.
  • Add fresh herbs just before serving for best flavor and color.
