Rice and Broth

  • 1 ½ cups Arborio rice
  • 5 cups vegetable or chicken broth, kept warm

Mushrooms and Aromatics

  • 10 oz fresh mushrooms (cremini, shiitake, or button), sliced
  • 1 medium onion or 2 shallots, finely chopped
  • 2 tbsp olive oil

Liquids and Finishing

  • ½ cup dry white wine
  • 2 tbsp butter
  • ½ cup freshly grated Parmesan cheese

  • Freshly ground black pepper, to taste

Instructions

  1. Prepare your ingredients: Finely chop the onions or shallots and slice the mushrooms evenly for uniform cooking. Warm your broth in a separate pot and keep it hot throughout the cooking process.
  2. Sauté mushrooms and aromatics: Heat olive oil in a large skillet or pot. Add the sliced mushrooms and season with salt to draw out moisture. Cook until the mushrooms are golden brown, then remove and set aside. In the same pot, sauté the chopped onions or shallots until translucent and fragrant.
  3. Toast the rice: Add Arborio rice to the sautéed onions and stir constantly for 1-2 minutes until the edges of the grains become translucent. This lightly toasts the rice and helps maintain texture during cooking.
  4. Deglaze with white wine: Pour in the white wine and stir until it is mostly absorbed by the rice, adding acidity and depth to balance the creaminess.
  5. Gradually add warm broth: Begin adding the warm broth one ladle at a time, stirring frequently. Allow the rice to absorb the liquid before adding more. This slow addition helps release starch and creates the characteristic creamy risotto texture.
  6. Fold in mushrooms and finish: When the rice is tender yet still slightly firm in the center (al dente), fold the sautéed mushrooms back into the risotto. Remove the pot from heat and stir in the butter and freshly grated Parmesan cheese for a rich and silky finish. Season with salt and pepper to taste.
