  • Strawberry juice or simple syrup – for brushing the cake base

Instructions

  1. Prepare the Strawberry Layer: Wash and slice fresh strawberries evenly. Gently toss them with 1-2 tablespoons of sugar and allow them to macerate for about 15-20 minutes to release their natural juices and sweetness.
  2. Make the Cream Mixture: Whip the cream gently until soft peaks form. Add 2 tablespoons of sugar and 1 teaspoon of vanilla extract, folding them into the whipped cream. Dissolve gelatin or agar-agar according to package directions, then carefully fold it into the whipped cream mixture. Optionally, fold in softened butter or mascarpone for added creaminess.
  3. Create the Base Layer: Arrange ladyfingers or slices of sponge cake evenly at the bottom of your chosen serving dish. Lightly brush the base with strawberry juice from the macerated berries or a simple syrup to keep it moist and flavorful.
  4. Assemble the Cake: Layer the macerated strawberries over the cake base. Spread half of the cream mixture gently on top.
