Ingredients

Scale

Dry Ingredients

  • 1 cup all-purpose flour (or gluten-free flour blend for gluten-free option)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated sharp cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 teaspoon garlic powder or dried herbs (like rosemary, thyme, or oregano)

Wet Ingredients

  • 6 tablespoons cold unsalted butter, cut into small pieces
  • 2 to 3 tablespoons ice water
  • 1/4 cup fresh basil leaves, finely chopped (or 1 tablespoon dried basil)

Toppings (Optional)

  • Sesame seeds, poppy seeds, or chia seeds for sprinkling before baking
  • Freshly grated Parmesan or chopped basil for garnishing after baking

Instructions

  1. Prepare the dough: In a large bowl, combine the all-purpose flour, grated Parmesan, and cheddar cheese. Add finely chopped fresh basil, salt, pepper, and any optional spices you prefer. Using your fingers or a pastry cutter, work the cold butter into the dry ingredients until the mixture becomes crumbly. Gradually add ice water, a tablespoon at a time, until the dough just starts to come together.
  2. Chill and roll out: Wrap the dough tightly in plastic wrap and refrigerate for at least 30 minutes to firm up the butter, which ensures flaky and crisp crackers. After chilling, roll out the dough on a lightly floured surface to about 1/8 inch thickness, making sure it is evenly rolled.
  3. Cut the crackers: Using a sharp knife or pizza cutter, slice the dough into your desired shapes such as squares, rectangles, or diamonds. Transfer the pieces carefully to a parchment-lined baking sheet, spacing them slightly apart to allow for even baking.
  4. Bake to perfection: Preheat the oven to 350°F (175°C). Bake the crackers for 15-18 minutes or until golden brown around the edges. Watch closely towards the end to prevent burning. Once baked, transfer crackers to a wire rack and cool completely to achieve maximum crispness.

Notes

  • Keep butter cold to achieve a flaky texture that bakes perfectly.
  • Do not overwork the dough to prevent tough crackers.
  • Roll the dough evenly for consistent baking and crunch.
  • Chilling the dough before baking helps the crackers hold their shape.
  • Monitor the crackers in the oven carefully, especially near the end, as they can quickly burn.
