Peppermint Bark Popcorn

Peppermint Bark Popcorn is a festive holiday treat combining crunchy popcorn with creamy white chocolate and refreshing crushed peppermint candies. This easy-to-make snack is perfect for cozy nights, holiday parties, and gifting, delivering a magical blend of sweet, minty, and crunchy flavors in under 30 minutes.

Ingredients

Scale

Base

  • 8 cups popped popcorn (from kernels or pre-popped)

Coating

  • 10 ounces white chocolate chips or melting wafers
  • 2 tablespoons butter or coconut oil

Flavoring

  • 1/2 cup crushed peppermint candy canes or peppermint candies
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt (optional)

Instructions

  1. Prepare Your Popcorn: Pop your popcorn kernels using your preferred method (stovetop, air popper, or microwave). Make sure the popcorn is lightly salted and remove any unpopped kernels for optimal texture and flavor.
  2. Melt the White Chocolate: In a microwave-safe bowl, melt the white chocolate chips together with butter or coconut oil in 30-second intervals, stirring between each until the mixture is smooth and creamy. Optionally, stir in vanilla extract and a pinch of salt to enhance the flavor.
  3. Combine and Coat: Pour the melted white chocolate mixture over the popcorn. Gently fold the popcorn using a light hand to evenly coat each kernel without crushing them.
  4. Add Crushed Peppermint: While the chocolate coating is still warm, sprinkle the crushed peppermint candy evenly over the popcorn. This adds a refreshing mint flavor and festive red color.
  5. Let it Set and Serve: Spread the coated popcorn onto parchment paper in an even layer. Allow it to cool completely at room temperature until the chocolate hardens. Once set, break into clusters and serve or package as desired.

Notes

  • Use high-quality white chocolate and fresh peppermint for the best flavor and texture.
  • Fold popcorn gently to avoid breaking or clumping.
  • Crush peppermint candies finely so they stick well to the chocolate.
  • Work quickly after melting chocolate since it hardens fast.
  • Use parchment paper to prevent sticking and ease cleanup.
