Instructions

  1. Prepare and Roast the Carrots and Chickpeas: Preheat your oven to 400°F (200°C). Peel and slice the carrots evenly.   2. Cook the Couscous: While the carrots and chickpeas roast, bring vegetable broth or water to a boil. Pour the hot liquid over the couscous in a heatproof bowl, cover, and let it steam for about 5 minutes. Fluff the couscous with a fork to keep it light and separate.
  3. Combine and Flavor: Add the roasted carrots and chickpeas to the warm couscous. Drizzle with fresh lemon juice and a little extra olive oil if desired. Toss gently to combine all ingredients and adjust salt and pepper as needed.
