Ingredients

Scale

Potatoes

  • 1.5 pounds small to medium Yukon Gold or red potatoes, washed and cut into even chunks

Fat & Oil

  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil

Herbs & Aromatics

  • 23 sprigs fresh rosemary, thyme, or parsley, minced
  • 3 garlic cloves, minced

Seasonings

  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Potatoes: Wash and dry your potatoes thoroughly, then cut them into even-sized chunks to ensure they roast evenly and develop a perfect crispy exterior.
  2. Parboil for Fluffy Interiors: Place the potatoes in boiling salted water and cook for about 8 minutes until they are just tender; this ensures a soft and fluffy inside after roasting.
  3. Brown the Butter: In a skillet, melt the unsalted butter over medium heat until it starts to foam and turns golden brown with a nutty aroma. Remove from heat immediately to prevent further browning.
  4. Toss Potatoes with Seasoning and Butter: Drain the parboiled potatoes and combine them in a large bowl with olive oil, browned butter, minced garlic, fresh herbs, salt, and pepper. Toss well to coat all potato pieces evenly.
  5. Roast Until Golden and Crispy: Spread the potatoes on a baking sheet in a single layer and roast in a preheated oven at 425°F (220°C) for 30-40 minutes, flipping halfway through. Roast until the potatoes are beautifully browned and crispy on all sides.

Notes

  • Dry potatoes well before roasting to achieve extra crispiness.
  • Use high heat (425°F/220°C) to ensure a golden crust without drying the interiors.
  • Do not overcrowd the pan; allow space for hot air to circulate and crisp all sides evenly.
  • Brown butter just before tossing the potatoes for maximal flavor, avoid preparing it too early.
  • Flip the potatoes halfway through roasting for even browning.
