Instructions

  1. Prepare the Sushi Rice: Cook 1 cup of short-grain sushi rice according to package instructions. While still warm, gently mix in 2 tablespoons rice vinegar, 1 teaspoon sugar, and a pinch of salt. Let the rice cool to room temperature to develop the right sticky texture and subtle tang.
  2. Form and Fry the Rice Bites: Shape the seasoned rice into small, compact rectangles or squares, about bite-sized. Heat vegetable or sesame oil in a skillet over medium heat and fry the rice pieces until golden brown and crispy on all sides. Remove and drain any excess oil.
  3. Prepare the Salmon: If using raw, cut the fresh salmon into thin strips or small cubes sized for the rice bites. For a seared option, lightly sear the salmon cubes in a hot pan until the outside firms up while keeping the inside tender and moist.
  4. Assemble the Bites: Place each crispy rice base on a serving plate, top with a piece of salmon, then add a dollop of mayo or spicy mayo. Garnish with finely sliced green onions, toasted sesame seeds, and drizzle with soy sauce or your choice of glaze.
