Ingredients

Scale

Vegetables & Mushrooms

  • 12 large button or cremini mushrooms
  • 4 garlic cloves, minced
  • 1 small onion, diced
  • Chopped mushroom stems from the 12 mushrooms
  • Fresh parsley or herbs, for garnish and stuffing (about 2 tablespoons chopped)

Meat & Dairy

  • 8 oz ground sausage
  • 4 oz cream cheese, softened
  • 1/4 cup grated Parmesan cheese

Oils & Seasonings

  • 1 tablespoon olive oil or butter
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Mushrooms: Clean the mushrooms gently with a damp cloth and carefully remove the stems. Set the caps aside, and finely chop the stems to use in the filling later, maximizing flavor and minimizing waste.
  2. Cook the Sausage and Aromatics: Heat olive oil or butter in a skillet over medium heat. Add ground sausage and cook until fully browned and crumbly. Stir in minced garlic, diced onion, and chopped mushroom stems. Sauté for about 5 minutes until fragrant and softened, creating a flavorful base for the stuffing.
  3. Mix the Cream Cheese Filling: Transfer the cooked sausage mixture to a bowl and allow it to cool slightly. Stir in softened cream cheese until smooth and well combined. Season generously with salt, pepper, and fresh herbs for extra flavor.
  4. Stuff the Mushroom Caps: Spoon the sausage and cream cheese mixture generously into each mushroom cap, pressing gently to fill every nook. Arrange the stuffed mushrooms on a baking sheet lined with parchment paper or a lightly greased pan for easy cleanup.
  5. Bake Until Golden: Sprinkle grated Parmesan cheese evenly over the stuffed mushrooms. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes or until the tops are golden and bubbly. Serve warm for the best flavor experience.

Notes

  • Choose fresh, large, and firm mushrooms to hold the filling better and taste fresher.
  • Don’t overfill the mushroom caps; leave a little space on top to allow the cheese to brown perfectly without spilling over.
  • Drain any excess liquid released by mushrooms after cooking the sausage mixture to keep the stuffing firm.
  • Use room temperature cream cheese for smoother blending with the sausage mixture.
  • Preheat your oven fully to ensure even cooking and a nicely browned topping.
