Instructions

  1. Prepare the Filling: Scramble the eggs in a skillet with butter or oil. Add chopped vegetables and cooked breakfast meat, cooking until vegetables are soft and eggs are fully set. Stir in cheese and let it melt. Season with salt, pepper, and optional herbs. Set aside to cool slightly.
  2. Roll Out the Dough: Unroll store-bought dough or prepare homemade dough, keeping it cold but pliable. Lightly flour the surface and roll to desired thickness. Cut dough into 4-6 inch wide rectangles or circles.
  3. Assemble the Hand Pies: Place a spoonful of filling in the center of each dough piece. Fold the dough over the filling and press edges tightly with a fork to seal.
