Ingredients

Scale

Chicken

  • 2 to 3 boneless, skinless chicken breasts or thighs (about 1.5 to 2 lbs)

Aromatics

  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Liquids and Thickener

  • 2 cups chicken broth
  • 2 tbsp all-purpose flour or cornstarch (for gluten-free option)

Dairy

  • 2 tbsp butter
  • 1/2 cup sour cream or cream cheese

Seasonings and Herbs

  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp dried thyme or 2 tbsp fresh parsley (optional)

Instructions

  1. Prepare the Chicken and Aromatics: Trim any excess fat from the chicken pieces and place them in the slow cooker. Chop the onion and mince the garlic, then spread them evenly on top of the chicken to build a flavorful base.
  2. Add Liquids and Seasonings: Pour the chicken broth gently around the chicken to keep it moist. Sprinkle salt, pepper, and your choice of herbs over the top to infuse the dish with savory flavors during cooking.
  3. Slow Cook the Chicken: Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender enough to shred easily with a fork.
  4. Make the Gravy: Carefully remove the cooked chicken and set aside. In a small bowl, mix the flour or cornstarch with a few tablespoons of cold water to create a smooth slurry. Whisk this mixture into the liquid left in the slow cooker. Add butter and sour cream (or cream cheese), stir thoroughly, and let the gravy thicken over low heat for 10-15 minutes.
  5. Combine and Serve: Shred the chicken with two forks and return it to the thickened gravy. Stir gently to coat the chicken well, then serve hot with your favorite sides for a comforting meal.

Notes

  • Use chicken thighs for more moisture and richer flavor.
  • Browning the chicken before slow cooking adds caramelized depth to the gravy.
  • Mix flour or cornstarch with cold water before adding to avoid lumps in the gravy.
  • Adjust seasoning after thickening the gravy for perfect flavor balance.
  • Check chicken early on high to prevent overcooking and drying out.
