Ingredients

Scale

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup graham cracker crumbs
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients

  • ½ cup (1 stick) unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract

Toppings

  • 1 ½ cups semi-sweet or milk chocolate chips
  • 2 cups mini marshmallows

Instructions

  1. Prepare Your Baking Pan: Grease or line a 9×13-inch baking pan with parchment paper to prevent sticking and make removing the bars easy. Preheat your oven to 350°F (175°C).
  2. Mix the Cookie Base: Cream the softened butter and brown sugar together until light and fluffy. Beat in the egg and vanilla extract until smooth. In a separate bowl, whisk together the all-purpose flour, graham cracker crumbs, baking soda, and salt. Gradually combine the dry ingredients with the wet mixture to form a soft dough.
  3. Bake the Base: Spread the cookie dough evenly into the prepared pan. Bake for about 12–15 minutes or until it just starts to set but is not fully baked—this ensures a chewy cookie foundation.
  4. Add Chocolate and Marshmallows: Remove the pan from the oven and immediately sprinkle chocolate chips evenly over the warm cookie base. Then, top with a generous layer of mini marshmallows.
  5. Final Bake and Toast: Return the pan to the oven and bake for another 5–7 minutes, or until the marshmallows are golden and the chocolate is melted. For an extra toasted finish, briefly broil for 1–2 minutes while watching closely to avoid burning.
  6. Cool & Slice: Allow the bars to cool completely in the pan before slicing into squares, so they hold their shape and the gooey layers are set perfectly.

Notes

  • Use room temperature ingredients to ensure even mixing and smooth results.
  • Do not overbake the cookie base; slightly underbaking keeps the bars chewy and moist.
  • Toast the marshmallows carefully, watching closely when broiling to prevent burning.
  • Press the dough evenly using your hands instead of spreading to avoid tough bars.
  • For cleaner slices, chill the bars for 30 minutes before cutting.
