Instructions

  1. Prepare the Chicken: Pound the chicken breasts to an even thickness. In a bowl, mix buttermilk, hot sauce, and a pinch of salt. Marinate the chicken in this mixture for at least 30 minutes to tenderize and infuse flavor.
  2. Make the Spicy Coating: In a shallow dish, combine flour, paprika, cayenne pepper, garlic powder, salt, and black pepper to create the seasoned flour coating.
  3. Coat the Chicken: Remove the chicken from the marinade, letting excess drip off. Dredge the chicken thoroughly in the seasoned flour. For extra crispiness, dip the chicken back into the buttermilk marinade and dredge again in the flour mixture.
  4. Fry the Chicken: Heat oil in a deep skillet or fryer to 350°F (175°C). Fry the chicken breasts carefully until golden brown and cooked through, about 6–8 minutes per side. Ensure the internal temperature reaches 165°F (74°C) using a thermometer.
  5. Assemble the Sandwich: Lightly toast the buns. Mix mayonnaise with a bit of hot sauce and spread generously on the bottom bun. Place the crispy chicken on top, then add fresh lettuce, tomato slices, and pickles. Cover with the top bun and serve immediately.
