Ingredients

Scale

Shrimp and Rice

  • 12 oz fresh or thawed peeled shrimp
  • 1 cup jasmine or basmati rice
  • Water for cooking rice (as per package instructions)

Spicy Marinade

  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 12 tbsp chili sauce or hot sauce (adjust to taste)
  • 2 tbsp lime juice (preferably fresh)
  • 2 tbsp olive oil or melted butter
  • Salt, to taste
  • Black pepper, to taste

Garnishes

  • Chopped fresh cilantro or sliced green onions
  • Lime wedges (optional)

Instructions

  1. Prepare the rice: Rinse 1 cup of jasmine or basmati rice under cold water to remove excess starch. Cook according to package instructions by simmering in water until tender and fluffy. Let rice rest covered off heat for 5 minutes to perfect texture.
  2. Make the spicy marinade: In a bowl, combine chili powder, paprika, cumin, minced garlic, grated ginger, chili sauce, lime juice, olive oil, salt, and black pepper. Mix well to form a vibrant spicy marinade.
  3. Marinate the shrimp: Toss the peeled shrimp in the marinade, ensuring each piece is fully coated. Let them sit for 10 to 15 minutes to absorb flavors.
  4. Cook the shrimp: Heat a skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side until they turn pink and slightly charred at the edges. Avoid overcooking to maintain juiciness.
  5. Assemble the bowls: Spoon the cooked rice into serving bowls. Top generously with the spicy shrimp. Garnish with chopped fresh cilantro or sliced green onions and serve with lime wedges if desired.

Notes

  • Do not overcook the shrimp as they cook very quickly and can become rubbery.
  • Use fresh lime juice for the brightest flavor impact instead of bottled juice.
  • Adjust the spice level by increasing or decreasing the hot sauce to suit your preference.
  • Toast the chili powder, paprika, and cumin briefly in the pan before mixing into the marinade to enhance their aroma.
  • Let cooked rice rest covered for 5 minutes off heat to achieve fluffy grains.
