Tostadas & Toppings

  • 46 crisp tostada shells (store-bought or homemade)
  • 1 cup halved cherry tomatoes
  • Chopped fresh cilantro, for garnish
  • Olive oil, for sautéing
  • Optional garnishes: thinly sliced radishes, cotija or queso fresco cheese, extra lime wedges, Mexican crema, chili powder

Instructions

  1. Prepare the Guacamole: In a bowl, mash the ripe avocados until mostly smooth but with some chunks remaining. Add finely chopped red onion, minced garlic, chopped cilantro, fresh lime juice, salt, and pepper. Mix gently to combine and set aside to let the flavors meld.
  2. Cook the Spot Prawns: Heat a drizzle of olive oil in a pan over medium heat. Lightly season the spot prawns with salt, pepper, and optional chili flakes or diced jalapeño. Sauté the prawns for 2-3 minutes on each side until they turn pink and opaque, being careful not to overcook to maintain tenderness.
  3. Prep the Tostada Shells: If tostada shells are not pre-made, bake or fry corn tortillas until crisp and golden brown. Allow the shells to cool slightly before assembling.
