Ingredients

Scale

Protein

  • 8 oz flank steak or sirloin, thinly sliced across the grain

Vegetables

  • 1 each red, yellow, and green bell peppers, sliced into long strips
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced

Sauces and Oils

  • 2 tbsp soy sauce (or tamari/coconut aminos for gluten-free)
  • 12 tbsp olive oil or vegetable oil, for cooking

Optional

  • Pinch of chili flakes, to taste
  • Green onions or fresh herbs (cilantro), sliced, for garnish
  • 1 tsp honey or brown sugar (optional, for a sweet touch)

Instructions

  1. Prepare the Steak and Vegetables: Slice the steak thinly across the grain to ensure tenderness. Wash and cut the bell peppers into long strips. Thinly slice the onions and mince the garlic and ginger for quick cooking.
  2. Heat the Pan: Warm a large skillet or wok over medium-high heat with a tablespoon of oil. Ensure the pan is hot enough to sear the steak without overcooking.
  3. Cook the Steak: Add the sliced steak in a single layer to the hot pan. Sear each side until browned, about 2-3 minutes total. Remove the steak and set aside to keep it tender and juicy.
  4. Sauté Veggies: In the same pan, add more oil if needed. Toss in the sliced onions, garlic, and ginger. Sauté for about 1 minute until fragrant. Add the bell peppers and stir-fry for 3-4 minutes until vibrant but still crisp.
  5. Combine and Sauce: Return the steak to the pan with the vegetables. Drizzle soy sauce over the mixture and toss to coat evenly. Stir-fry for another 1-2 minutes to meld the flavors.
  6. Final Touches: Remove from heat. Garnish with sliced green onions or fresh herbs. Sprinkle chili flakes if you want some heat before serving.

Notes

  • Slice steak thinly: Cutting across the grain ensures tenderness.
  • Preheat your pan: A hot skillet locks in juices by searing the steak quickly.
  • Don’t overcrowd the pan: Cook steak and vegetables in batches for proper caramelization if needed.
  • Use fresh ingredients: Fresh garlic, ginger, and colorful peppers elevate the flavor.
  • Adjust sauce gradually: Add soy sauce in increments to avoid oversalting.
