Sticky Beef & Noodles is a quick, comforting dish that combines tender beef strips with chewy egg noodles coated in a rich, sweet-savory sticky sauce. Perfect for busy weeknights, this one-pan recipe balances flavor and convenience with simple pantry ingredients and a luscious sauce that leaves you craving more.

Ingredients

Scale

Beef and Marinade

  • 8 oz thinly sliced beef strips
  • 2 tbsp soy sauce
  • 1 tsp cornstarch (for marinade)
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated

Noodles

  • 8 oz wide egg noodles

Sticky Sauce

  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp water
  • 1 tsp cornstarch (for sauce)

Cooking and Garnishes

  • 2 tbsp vegetable oil
  • 2 green onions, chopped
  • Optional: toasted sesame seeds for garnish

Instructions

  1. Prepare the beef and marinade: Slice your beef into thin strips and toss with soy sauce, a pinch of cornstarch, minced garlic, and grated ginger. Let it sit for 10 minutes to allow the flavors to soak in and the cornstarch to tenderize the meat.
  2. Cook the noodles: Boil the egg noodles according to package instructions until just tender. Drain and set aside, ensuring they don’t stick together.
  3. Sear the beef: Heat vegetable oil in a large skillet or wok over high heat. Add the marinated beef strips and quickly sear them, stirring often, until browned but still juicy, about 2 to 3 minutes.
  4. Prepare the sticky sauce: In a small bowl, mix soy sauce, brown sugar, water, and cornstarch. Pour this mixture over the beef and stir continuously as the sauce thickens into a glossy, sticky glaze.
  5. Combine noodles and sauce: Add the cooked noodles directly to the skillet with the beef and sauce. Toss everything thoroughly to coat each noodle strand in the rich sticky sauce.
  6. Final touches: Garnish with chopped green onions and optionally sprinkle toasted sesame seeds for a fresh, crunchy finish that elevates each bite.

Notes

  • Freeze beef for 15 minutes before slicing to achieve ultra-thin strips that cook quickly.
  • Use high heat when searing beef to keep it tender without overcooking.
  • Cook noodles slightly underdone to prevent mushiness after mixing.
  • Taste and adjust brown sugar to balance the sweet and savory flavors to your preference.
  • Prepare all ingredients beforehand for a smooth and fast cooking process.
