Instructions

  1. Prep Your Ingredients: Cut beef into bite-sized chunks and dice the carrots, potatoes, onions, and celery. Mince the garlic and gather fresh herbs and seasonings.
  2. Brown the Beef: Heat olive oil or butter in a heavy-bottomed pot over medium-high heat. Add beef in batches, browning each side until a rich crust forms. Remove and set aside.
  3. Sauté Vegetables: In the same pot, add onions, carrots, and celery. Cook until softened and aromatic, then stir in garlic last to prevent burning.
  4. Add Flour and Tomato Paste: Sprinkle flour over vegetables and stir for about a minute to cook out raw taste. Mix in tomato paste to coat and enrich flavor and color.
  5. Deglaze and Simmer: Slowly pour in beef broth, scraping browned bits from the pot bottom. Return beef to pot, then add potatoes, Worcestershire sauce, thyme, and bay leaves. Bring to a boil, then reduce to a gentle simmer.
  6. Cook Until Tender: Let stew simmer uncovered for 45 minutes to 1 hour, stirring occasionally, until beef is tender and broth thickens. Season with salt and pepper to taste before serving.
