Ingredients

Scale

Fresh Strawberries

  • Ripe, fragrant fresh strawberries (quantity as needed for layering and decoration)

Custard

  • 2 cups high-quality milk
  • 3 large eggs
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest (optional)

Cake Components

  • 1 ¾ cups all-purpose flour (or gluten-free flour blend if desired)
  • 2 teaspoons baking powder
  • ¾ cup sugar
  • ½ cup unsalted butter, softened
  • 3 large eggs

Optional

  • Whipped cream for serving
  • Lemon zest for garnish

Instructions

  1. Prepare the Custard: Heat the milk gently in a saucepan. In a separate bowl, whisk together the eggs, sugar, and vanilla extract until combined. Slowly temper the egg mixture by gradually adding the warm milk while whisking continuously to prevent curdling. Return the mixture to the saucepan and cook over low heat, stirring frequently, until it thickens into a smooth, creamy custard with no lumps.
  2. Bake the Cake Layers: Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, baking powder, and sugar. Add softened butter and eggs, mixing until a smooth batter forms. Pour the batter evenly into greased baking pans and bake for 20-25 minutes or until golden and spongy. Remove from oven and cool completely before assembling.
  3. Slice and Prepare Strawberries: Wash the strawberries thoroughly. Slice them evenly for layering inside the cake, reserving a few whole berries for decoration on top.
  4. Assemble the Cake: Place one cake layer on a serving plate. Spread an even layer of custard over the cake, then distribute sliced strawberries evenly on top. Repeat the custard and strawberry layering with the next cake layer. Finish by spreading custard on top and garnish with reserved whole strawberries and a sprinkle of lemon zest if desired.
  5. Chill and Serve: Refrigerate the assembled cake for at least two hours to allow the custard to set and flavors to meld. Slice and serve chilled, optionally with whipped cream or additional garnishes.

Notes

  • Use room temperature ingredients for smoother batter and custard.
  • Temper eggs gradually by slowly adding warm milk to avoid scrambling the custard.
  • Avoid overbaking cake layers; slightly underbaked layers stay moist and absorb custard better.
  • Select ripe, fresh strawberries for optimal flavor and texture.
  • Chill the cake before slicing to ensure clean cuts and firmer structure.
