Instructions

  1. Prepare the filling: Brown the ground meat in a skillet over medium heat, breaking it up into small pieces as it cooks. Add diced onion and minced garlic, cooking until softened. Stir in the taco seasoning, black beans, corn, diced tomatoes, and optional green chilies or jalapeños. Let the mixture simmer for a few minutes to thoroughly blend the flavors.
  2. Layer the casserole: Grease a baking dish. Begin with a layer of the cooked meat mixture. Sprinkle a generous amount of crushed tortilla chips over the meat. Repeat these layers once more, then finish with a thick layer of shredded cheese on top for a melty, flavorful finish.
  3. Bake until bubbly: Preheat the oven to 375°F (190°C). Bake the casserole for 20-25 minutes until the cheese is fully melted and bubbly, with golden spots. Remove from the oven and allow it to rest for a few minutes so the layers set nicely for easier serving.
