  • 1 green bell pepper, chopped
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 23 cloves garlic, minced
  • 4 cups chicken or beef broth
  • 2 tablespoons taco seasoning (store-bought or homemade)

Instructions

  1. Brown the Ground Beef: In a large pot over medium heat, cook the ground beef until no longer pink, breaking it apart as it cooks for even browning. Drain any excess fat to prevent greasiness.
  2. Sauté the Vegetables: Add the chopped onion, green bell pepper, and minced garlic to the pot. Cook for about 3-4 minutes until softened and fragrant, mixing well with the beef to build flavor.
  3. Add Beans, Tomatoes, and Broth: Pour in the rinsed black beans, kidney beans, diced tomatoes with their juices, corn kernels, and broth. Stir gently to combine everything evenly.
  4. Season and Simmer: Sprinkle the taco seasoning over the mixture and stir well. Bring the soup to a boil, then reduce heat and simmer uncovered for 15-20 minutes to meld all the flavors.
  5. Adjust and Serve: Taste the soup and adjust the seasoning if needed, such as adding salt or more taco seasoning. Ladle into bowls and serve hot with desired garnishes.
