Ingredients

Scale

Protein

  • 1 lb ground beef or protein alternative (such as meatless crumbles, black beans, or lentils)

Pasta

  • 8 oz spaghetti noodles

Vegetables and Aromatics

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper or 1-2 jalapeños, diced (optional)

Seasonings and Sauce

  • 2 tablespoons taco seasoning (blend of chili powder, cumin, paprika, garlic powder)
  • 1 can (14 oz) diced tomatoes or 1 cup salsa
  • Reserved pasta water, about ½ cup

Cheese

  • 1 to cups shredded cheese (cheddar, Monterey Jack, pepper jack, or Mexican cheese blend)

Instructions

  1. Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti noodles and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.
  2. Brown the Protein: Meanwhile, heat a skillet over medium heat. Add ground beef or your chosen protein alternative and cook until browned and cooked through, breaking it into small pieces as it cooks.
  3. Sauté Aromatics and Add Seasoning: Add diced onions, minced garlic, and bell peppers or jalapeños (if using) to the skillet. Cook until softened, about 3-4 minutes. Sprinkle in the taco seasoning and stir well to coat the meat and vegetables evenly.
  4. Add Tomatoes and Simmer: Pour in diced tomatoes or salsa along with a splash of the reserved pasta water. Stir to combine and let the sauce simmer for 5-7 minutes, allowing the flavors to meld.
  5. Combine Pasta and Sauce: Add the cooked spaghetti noodles into the skillet with the taco meat sauce. Toss thoroughly to ensure each strand is coated with the flavorful taco sauce.
  6. Finish with Cheese: Sprinkle shredded cheese generously over the pasta. Cover the skillet briefly to let the cheese melt into the dish, creating a gooey, cheesy topping.

Notes

  • Use fresh or homemade taco seasoning for more vibrant flavor compared to store-bought packets.
  • Cook spaghetti to al dente to maintain texture when mixed with sauce.
  • Reserve pasta water to adjust sauce consistency without diluting flavor.
  • Add some cheese into the sauce during cooking for extra creaminess before topping it.
  • Let the dish rest for a few minutes after cooking to deepen the flavors.
