Instructions

  1. Sauté the aromatics and meat: Set the Instant Pot to “Sauté” mode and add 1–2 tablespoons of oil. Brown the ground beef or chosen protein until no longer pink. Then add the chopped onions and minced garlic. Sauté until the onions become soft and fragrant, creating a flavorful base.
  2. Add spices and vegetables: Sprinkle chili powder, cumin, salt, pepper, and any optional cayenne or smoked paprika over the meat and vegetables. Stir well to coat everything evenly. Add the diced bell peppers and mix thoroughly.
  3. Incorporate liquids and beans: Pour in diced tomatoes, tomato paste, and broth. Stir in the rinsed beans, ensuring they are fully submerged and mixed throughout for a rich, saucy consistency.
  4. Pressure cook: Secure the Instant Pot lid and set the valve to sealing. Select the “Manual” or “Pressure Cook” function and cook on high pressure for 15 minutes. When done, use a natural release for 10 minutes to allow flavors to meld beautifully.
