Ingredients

Scale

Fish

  • 4 fresh or thawed tilapia fillets (about 6 ounces each)

Roasted Pepper Sauce

  • 1 cup roasted red peppers (jarred or freshly roasted, chopped)
  • 1 small yellow or white onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 tablespoon freshly squeezed lemon juice

Garnishes (Optional)

  • Fresh parsley or cilantro, chopped
  • Lemon wedges

Instructions

  1. Prepare the Roasted Pepper Sauce: Finely chop the roasted red peppers, onion, and garlic. Heat the olive oil in a skillet over medium heat and sauté the onion until translucent and soft. Add the garlic and cook for another minute until fragrant. Stir in the roasted peppers, smoked paprika, salt, and pepper. Cook for about 5 minutes to meld flavors. Transfer the mixture to a blender and pulse until smooth but slightly textured. Keep the sauce warm.
  2. Cook the Tilapia Fillets: Lightly season the tilapia fillets with salt and pepper on both sides. Heat a tablespoon of olive oil in a non-stick skillet over medium-high heat. Place the fillets carefully in the pan and cook for 3-4 minutes on each side, until the fish is opaque and flakes easily with a fork. Handle gently to keep fillets intact.
  3. Combine and Serve: Spoon the roasted pepper sauce generously over the cooked tilapia fillets. Garnish with fresh herbs and a squeeze of lemon juice for added brightness. Serve immediately with your choice of side dishes.

Notes

  • Use fresh or properly thawed tilapia for tender, flaky fish.
  • Avoid overcooking the tilapia to prevent dryness.
  • Roast your own red peppers if time allows for deeper smoky flavor.
  • Keep the pepper sauce slightly textured rather than completely smooth for rustic appeal.
  • Taste and adjust seasoning with salt, pepper, or lemon juice before serving.
