Instructions

  1. Prepare the ingredients: Slice the turkey breast into thin strips for quick cooking. Chop the bell peppers, broccoli florets, and carrots into bite-sized pieces. Mince the garlic and grate the ginger. Having all ingredients prepped ensures even cooking and timing.
  2. Mix the teriyaki sauce: In a small bowl, whisk together soy sauce, honey or brown sugar, rice vinegar or mirin, minced garlic, grated ginger, and cornstarch until smooth. This will create a glossy sauce that coats the stir fry perfectly.
  3. Cook the turkey: Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the turkey strips and cook, stirring occasionally, until browned and cooked through, about 4–5 minutes. Remove the turkey from the pan and set aside.
  4. Stir fry the vegetables: In the same pan, add a little more sesame oil if needed. Add the carrots, broccoli florets, and bell peppers. Stir constantly for about 5 minutes until vegetables are tender-crisp and vibrant.
  5. Combine and cook with sauce: Return the turkey to the pan with the vegetables. Pour the teriyaki sauce over everything and stir continuously for 2–3 minutes until the sauce thickens and evenly coats the turkey and vegetables.
  6. Garnish and serve: Remove the pan from heat and sprinkle chopped green onions over the stir fry. Serve hot over steamed rice or noodles for a comforting meal.
