  • 2 cups fresh kale or spinach, chopped

  • 2 celery stalks, diced

Liquids & Fats

  • 6 cups vegetable or chicken broth
  • 2 tablespoons olive oil, plus extra for drizzling

Herbs & Seasonings

  • 1 sprig fresh rosemary
  • 1 sprig fresh thyme
  • 1 bay leaf
  • Salt and pepper, to taste

Optional Ingredients

  • Parmesan cheese rind or 1/4 cup grated Parmesan cheese
  • Crusty bread, for serving

Instructions

  1. Step 1: Sauté the aromatics. Heat olive oil in a large pot over medium heat. Add diced onions, garlic, carrots, and celery. Cook until softened and fragrant to build the aromatic base of the soup.
  2. Step 2: Add the broth and herbs. Pour in vegetable or chicken broth. Add rosemary, thyme, and bay leaf. Bring to a gentle simmer to allow flavors to meld.
  3. Step 3: Incorporate the beans and greens. Add drained cannellini beans and chopped kale or spinach. Stir gently and let the greens wilt as the beans warm through.
  4. Step 4: Season and simmer. Season with salt and pepper to taste. Add Parmesan rind if using. Simmer the soup gently for at least 20 minutes to deepen the flavors.
  5. Step 5: Finish and serve. Remove herb sprigs and Parmesan rind. Ladle the soup into bowls, drizzle with extra virgin olive oil, and serve with crusty bread for dipping.
