Cheese and onion braised steak is a hearty, comforting dish featuring tender slow-cooked steak infused with caramelized sweet onions and melted creamy cheese, creating a perfect harmony of rich flavors and melt-in-your-mouth texture ideal for any cozy meal.

Ingredients

Scale

Steak

  • 2 lbs chuck or brisket steak, suitable for braising

Vegetables & Aromatics

  • 2 large sweet or yellow onions, sliced
  • 3 garlic cloves, minced

Dairy

  • 1 cup cheddar or gruyere cheese, shredded (alternative: mozzarella or blue cheese)

Liquids & Fats

  • 2 cups beef stock
  • 2 tbsp butter
  • 2 tbsp cooking oil (such as vegetable or olive oil)

Herbs & Seasonings

  • 2 sprigs fresh thyme or rosemary
  • Salt, to taste
  • Black pepper, to taste
  • Optional: pinch of chili flakes or cayenne pepper

Instructions

  1. Preparing the Steak: Season the steak generously with salt and black pepper, then pat dry with paper towels. Heat the oil and butter in a heavy-bottomed pan over medium-high heat. Brown the steak on all sides until a rich caramelized crust forms, locking in the juices and developing deep flavor.
  2. Caramelizing the Onions: Reduce the heat to medium-low. In the same pan, add the sliced onions and cook slowly, stirring frequently until they turn golden brown and sweetly aromatic, approximately 20-30 minutes. This slow caramelization brings out natural sweetness that balances the dish.
  3. Building the Braising Liquid: Add the minced garlic and fresh herbs (thyme or rosemary) to the pan, cooking briefly until fragrant. Pour in the beef stock, scraping the bottom of the pan to release browned bits. Bring the liquid to a gentle simmer.
  4. Slow Braising Until Tender: Return the browned steak to the pan, ensuring it is partially submerged in the braising liquid. Cover the pan with a lid and reduce heat to low. Let the steak braise gently for 2 to 3 hours, turning occasionally. This slow cooking breaks down collagen, resulting in juicy, tender meat.
  5. Adding Cheese to Finish: When the steak is fork-tender, sprinkle shredded cheese evenly over the top. Cover again and allow the cheese to melt for a few minutes, creating a creamy, decadent sauce that enriches the entire dish.

Notes

  • Patience is key: slow braising yields the most tender and flavorful steak.
  • Ensure proper searing by preheating the pan; avoid steaming the meat.
  • Use a quality homemade or store-bought beef stock for best flavor.
  • Add cheese at the end to preserve its creamy texture without overcooking.
  • Allow the steak to rest briefly after cooking to redistribute juices.
