Instructions

  1. Caramelize the Onions: Heat butter and olive oil in a large skillet over medium heat. Add the thinly sliced yellow onions and a pinch of salt. Cook slowly, stirring occasionally, for about 20 minutes until onions turn deep golden brown, sweet, and tender.
  2. Add Garlic and Herbs: Stir in minced garlic, fresh thyme leaves, and bay leaves. Cook for about 1 minute until fragrant, being careful not to burn the garlic.
  3. Pour in Broth and Simmer: Add the beef or vegetable broth to the skillet. Bring to a gentle simmer and let it reduce slightly for 5 minutes, forming the flavorful sauce base.
  4. Cook the Noodles: Meanwhile, bring a large pot of salted water to a boil. Cook egg noodles according to package instructions until al dente. Drain and set aside, reserving some pasta water for later if needed.
  5. Combine Noodles and Cheese: Add the drained noodles directly into the skillet with the onion mixture. Sprinkle shredded Gruyere and mozzarella on top. Gently toss over low heat until cheeses melt and coat the noodles evenly.
