Ingredients

Scale

Main Ingredients

  • 1 cup fresh, grilled, or thawed frozen corn kernels
  • 1 cup ricotta cheese (preferably whole milk for creaminess)
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup cherry tomatoes, halved
  • 2 tablespoons extra virgin olive oil, plus extra for brushing bread and drizzling
  • 1 garlic clove, halved
  • 1 baguette or crusty bread, sliced into ½-inch pieces
  • 1 tablespoon fresh lemon juice
  • Salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Prepare the corn mixture: In a bowl, gently combine the corn kernels, chopped basil, halved cherry tomatoes, 2 tablespoons of extra virgin olive oil, fresh lemon juice, salt, and freshly cracked black pepper. Mix carefully to blend all the fresh flavors without crushing the tomatoes.
  2. Toast the bread slices: Slice the baguette or crusty bread into ½-inch thick pieces. Lightly brush each slice with olive oil and rub the surface with the cut side of a garlic clove. Toast the bread in a skillet or oven until golden brown and crisp, being careful not to burn.
  3. Spread the ricotta: Allow the toasted bread slices to cool slightly. Then, spread a generous layer of creamy ricotta cheese on each piece, creating a luscious base for the topping.
  4. Top with the corn mixture: Spoon the prepared corn and tomato mixture evenly over each ricotta-covered toast. Make sure to include some juicy tomatoes and bits of fresh basil on every slice for flavor and presentation.
  5. Final drizzle and serve: Finish each bruschetta with a light drizzle of extra virgin olive oil and, if desired, a sprinkle of freshly cracked black pepper. Serve immediately to enjoy the optimal contrast between the crispy bread and creamy topping.

Notes

  • Use the freshest corn and herbs available for the brightest, most vibrant flavors.
  • Do not over-toast the bread; aim for a golden crust without burning to keep a pleasant crunch without bitterness.
  • Pat cherry tomatoes dry to remove excess moisture and prevent soggy toppings.
  • Choose whole milk ricotta for the creamiest and smoothest spread, but low-fat varieties can be used as well.
  • Adjust salt and lemon juice gradually, tasting as you go, to perfectly balance the flavors.
