Ingredients

Scale

Main Ingredients

  • 1 lb fresh or frozen peeled and deveined shrimp
  • 23 chipotle peppers in adobo sauce, chopped
  • 1 cup heavy cream
  • 3 garlic cloves, finely chopped
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • Salt and pepper, to taste

Optional Garnishes and Additions

  • Fresh cilantro, chopped (for garnish)
  • 1 tablespoon fresh lime juice
  • Avocado slices (optional garnish)
  • Shredded cheese (optional, for Mexican-style serving)

Instructions

  1. Prepare Ingredients: Peel and devein the shrimp if not already done, finely chop the onion and garlic, and measure out the chipotle peppers and heavy cream.
  2. Sauté Aromatics: Heat the olive oil in a skillet over medium heat. Add the chopped onions and cook until translucent, about 3-4 minutes. Stir in the garlic and cook for another 30 seconds until fragrant.
  3. Cook the Shrimp: Add the shrimp to the skillet and season with salt and pepper. Cook for about 2-3 minutes per side, or until the shrimp turn pink and opaque. Remove the shrimp from the pan and set aside.
  4. Make the Chipotle Cream Sauce: In the same pan, add chopped chipotle peppers and a splash of the adobo sauce. Stir to combine with the onion and garlic. Pour in the heavy cream and bring to a gentle simmer, letting the sauce thicken slightly, about 3-5 minutes.
  5. Combine and Finish: Return the cooked shrimp to the pan and coat them well with the sauce. Warm through for 1-2 minutes. Finally, squeeze in fresh lime juice and stir in chopped cilantro if desired before serving.

Notes

  • Use fresh or fully thawed shrimp for best texture.
  • Be careful not to overcook the shrimp to avoid rubberiness.
  • Start with one chipotle pepper and add more to control heat level.
  • Simmer the cream sauce gently to prevent curdling and keep it silky.
  • Add fresh lime juice at the end to brighten flavors.
