  2. Mix the wet ingredients: In a bowl, whisk together the eggs, a pinch of salt, and pepper until evenly combined and slightly frothy to create the binding base for the muffins.
  3. Combine the dry ingredients: In a separate large bowl, gently toss the thawed potato gems with the chopped bacon or ham, cheese, and spring onions or chives to distribute evenly.
  4. Incorporate everything: Pour the egg mixture into the potato gem mixture and stir carefully until all ingredients are coated and the mixture starts to stick together.
